It's coming up 8 months on my plants based diet and I can't see myself changing. Have had my bloods done last month and all were good. I lost 12kg of weight over the first 6-8 weeks but have retained the same weight since, feel great, have lots of energy so why change. Anyone else out there on the same diet or thinking of giving it a go?

Hi Heather,
I feel great physically. Still working out at the gym and doing all the usual activities I used too do. Because I have lost some weight ( which I didn't think I had much to loose) I am very light on my feet and bounce out of bed in the morning. Had my bloods checked last week and they were all good, so i seem to be eating enough of the correct food. I do take a multi vitamin each day just to make sure I cover all bases.
You will see I have posted a recipe - its a yummy Moroccan dish from my friend Noel - do try it.

Moroccan diced potatoes and leeks with spicy tomato sauce on cous cous
I have finally got a recipe posted!!
Moroccan diced potatoes and leeks with spicy tomato sauce on cous cous
6 medium potatoes
1 large onion
1 large leek
½ - 1 T Moroccan spice
Sauce
1 tin crushed tomatoes
½ tsp turmeric
½ tsp cinnamon
2 cloves garlic
¼ tsp pepper/ chili (depends on how hot you like it)
½ cup of raisins
Vegetable stock
Salt & black pepper
Cous cous
Method
Dice potatoes, onion and leek. Toss with salt, ground black pepper and vegetable stock and Moroccan spice. Toss veg in a skillet until they start turning colour (about 5mins) Place skillet covered in oven for about 20mins on 150c or until vegetables are cooked. You may need to put in some more veg stock if it starts sticking.
Sauce
Combine all sauce ingredients plus some veg stock and salt & pepper then reduce over a slow heat.
Spoon potato, onion and leek mix over a bed of cous cous, then drizzle tomato sauce over - enjoy.

Hi Heather,
Thanks for making contact. Tips to get started. Well probably do what I did and go cold-turkey. I ate meat for 50 years and on the 28th Feb this year I decided I wouldn't eat animal products. If you feel that you can't take on this dramatic approach just wean yourself off meat and dairy by eating it every other day for awhile then maybe fish, vegetarian and so on... I personally couldn't do that I'm a feast or famine man. I will be posting some recipes the next day or two that you can add to your new and exciting diet. Keep in touch.

Had a great meal out at friends the other night. Murray is a chef and is also on a plant based diet so it was yummy. Started off with new seasons artichoke's and fresh asparagus then stuffed crepes with a lovely bean mix with a tomato sauce drizzled over the top with whole cherry tomato's. To finish he served up sweet crepes stuffed with feijoa and soy ice cream and a Delicious botrytis dessert wine to round it off. Thanks Murray and Trish we really enjoyed the evening.

It pays to be handy in the kitchen and have a creative culinary brain.
I have been on Dr Esselstyn's plant based diet for 6 months now and really enjoy - http://www.heartattackproof.com/
I have set up this blog to hopefully generate some sort of a support group. I would like to hear from anybody who is interested in Dr Esseltyn's research, perhaps you are on the diet as well?
